If someone accesses remotely they will make a trace in the log files if you have them enabled and they dont disable logging / remove the log enteries.
They will then be browsing as a user and there is no way i know to pull IP information about a user besides the logs, the folders will be accessed by a local user, even if they connect remotly so thats a big no for IP info for individual folders.
I would check the logs for remote access if I were you.
And if your worried someone might be deleting the log files, I would set it up to burn the logs to a writable CD (not re-writable) using a burner.
